So I got 73 points. That is including my bonus points!  Not good!!  I am very disappointed with myself.  My biggest problem last week was the fruits and veggies.  There was only 1 day that I actually got all 5.  It was a very emotional week for the Steidleys.  Brian's grandma passed away on Tues.  They knew she wasn't going to make it through the day so Brian left work early and we spent the afternoon in Rockland.  Then Friday his dad had a heart attack and was life flighted to Poky.  So we spent that afternoon at the hospital.  Very scary.  He is doing fine now.  He got to go home yesterday and the funeral was this morning.  It was a very nice funeral.  It puts things in perspective.  She was 98 years old and just to imagine all the things she experienced in this life are nothing compared to eternity!!  So grateful for the knowledge we have of eternal life.   Since I had other things on my mind and I would go a couple days without marking my points I had to think hard about what I had eaten, etc.  Crazy. Good  thing I love drinking water since that was my bonus.  Plus with it being so hot I was downing the water!!  I am so looking forward to seeing everyone this weekend!!!
First of all, I want everyone to know that I actually did resist the Oreos last week--I was able to have 1 3/4 cookies on my birthday and Saturday (my 100 free calories each day).   But, I have to be honest--I hid the second package and I am going to eat a lot today!!!!
I had 72 points plus the 10 bonus points last week.  I am glad it is over!  This week I am going to enjoy anything I want (I will get back on track the next week, because I really do need to live healthy).
Excited to see everyone this weekend--it will be a blast!!!!
Like I said this week was a hard one..... but I got more points than I thought I would!!  I got 79 that is with the 10 bonus points~ now to relax and not have to count water and fruits and veggies!
Well, I thought I was going to tie mom, but then I dropped the ball!  Some mistakes were totally conscious, some just dumb, but I got 69 points this week.  My worse week ever, way to endure to the end, eh?  Anyway, congrats mom!  You're awesome!  and I am excited to see everyone this next weekend and gain 5lbs with y'all!

Friday, July 6, 2012

Hope everyone had a good Fourth of July, ours was great!  This has been a hard week to be good about eating right.  Dad and Zenna gave me Oreos for my birthday--I don't know if I can resist having some and save them for next week--okay everyone knows I'm going to pig out on them before the day is over!!

Now, that I have Rachel's points for last week--here is the update:

Rachel Jake Amy Kristi Katie Karina Mom
June 11-17 70 73 73 73 73 68 73
June 18-24 70 70 71 72 65 71
June 25-July 1 72 52 67 71 62 72
July 2-8
Bonus Points 10 10 10 10 20 10 10
Total 222 83 205 221 236 205 226
Ok so I was in Provo on Monday and I couldn't log in so I left a comment on Karina's log and told my points and I guess that didn't work either!!  I think I had 72 points from last week!!  now this week might be a different story!  It is sad when we have dinner at midnight and I still got a point for eating  2 hours before bed!! lol  Points for 7 hours of sleep and getting all of the veggies in the first part of this week has been the hard ones!  Happy to see everyone next week!!  congrats Katie!

Tuesday, July 3, 2012

Oh my goodness golly! Congrats Katie! I was waiting for that announcement! I guess I won't be pregnant with you this time! Maybe next time and Zenna can join too! Haha see you all soon! Bring your party pants everyone!
It's great to find out on the family blog that we have another grandchild on the way!!!  Congratulations, Katie.
I think we are all having a little harder time for our contest--to be honest I will be glad when I don't have to worry about reporting.  Rachel is down in Provo with Brooke for the Stadium of Fire practices, so I am sure that is why she hasn't reported for last week.  Four of us still have a chance to earn 10 extra points this week--Rachel, Kristi, Amy and Me (have to drink 10 cups of water each day)
Excited to see everyone next week for Wardle Olympics.  Excited that we will be able to eat whatever we want and as much as we want. haha.

Lame-O

Well that was lame.  It's so not Monday anymore is it?!  Well, losing that lame point, I think I got 71 points for the week.  I am so not as motivated as before.  Is it because it's summer or because I'm pregnant?  I do think all the points I've lost are eating late.  One night I was hungry, but said I'll just go to bed and eat in the morning, I woke up at 3:30 and ate rice krispies!!  Sometimes, I don't want to eat period, let alone 3 veggies!  But I am glad I'm doing this, or I would just say, i'm pregnant so I can down a bag of oreos or have ice cream, or eat what ever I want.  So even though I'm not enjoying it this time, I thank you on behalf of me and my baby that we are getting good food and exercise!  btw, I'm only 8 weeks, so let's keep this info within family only.  I figured all would find out next weekend anyway, but it is early for me to announce.  Ty has a sister in town who asked me point blank yesterday if I was pregnant, and if she knows it won't be long before more peterson's know!  ps the title is lame-o because of not reporting yesterday!  The title for being prego is Awesome-O!  So there are your two good news for the day.  (I know you are all secretly happy to see me lose points!!)  But the other news is even better news!  Have a Great day!!

Monday, July 2, 2012

I am doing worse each week!  I got 67 pts last week.  Monday was our mini vacation in Lava, Tues was a ward party with yummy treats, Fri. my visitin teachers brought me strawberries dipped in white chocolate and blue springles (at least I got a point for the fruit), Sat we went to Rockland and his mom had ordered every kind of schwanns ice cream they have.  So needless to say I couldn't resist all the yummy treats around me, but they were delicious!!!
Well this week I got 62 points...a little better :) I am excited to see everyone soon!
One more week and we can all have a break! My points for this week are 72 plus 10 bonus points.  Bret and Cami were here over the weekend and she made a yummy treat--I was so glad I still had my free day!!

Sliding down hill, but having a blast!

52 points for me this week.  I had a lot of fun family things this week that made it impossible to resist eating treats, not exercising, and sleeping....but no regrets, I still did my best, and had such a fun time with my sisters and mom.  We headed to Richfield, where Hannah lives and stayed in a 100 year old house that my grandma's grandfather lived in.  Her cousin lives there now and was born in the house.  It was so fun.  We ate, laughed, cried, and left all children, husbands, and worries at home!!!!!  It is something I would love to do with the wardle side....soooooo much fun and worth all the work.  I stayed up late every day last week, and made 7 aprons for my sisters and sister in laws.  It was so fun and I am a pro apron maker now, but I still have two more to do, so I am not out of the woods.  We are working hard this week on getting back on track, no more swimming lessons and jake is in town...so we are happy.  I got up at 5:30 this morning and went to the gym, so I am pretty proud of myself.  One thing Iam working on this week is a scripture study schedule, I planned out what I am going to read each day and when I will do it.  I hope this helps me feel more spiritual, since I am in nursery I need a little boost.  Let me know what you do for study time and what works.  I always seem to need to work on this one in my life.

Thanks for all the encouragment you give me!  I love you guys!

Jake is pretty much not doing this for real nay more, but he is still eating good with me and exercising, his work has been way intesnse.

I am going to make some monkey bread for you at wardle olympics...that is my new idea....it is covered in bad stuff...so it is not healthy, but a really fun treat......and by then we will be having our break!

Thursday, June 28, 2012

I tried a new recipe today.  I'm not sure how healthy it is, but I did get it from eatingwell.com so I am going to count it for my bonus points.  I made muffins and they were pretty good, but I think I baked them a little too long.

Spiced Apple Cider Muffins

Streusel
2 tablespoons packed light  brown sugar
4 teaspoons whole-wheat flour
1/2 teaspoon cinnamon
1 tablespoon butter, cut into small pieces
2 tablespoons finely chopped walnuts (optional) I didn't use them

Muffins
1 cup whole-wheat flour
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1 large egg
1/3 cup packed light brown sugar
1/2 cup apple butter, such as Smucker's
1/3 cup maple syrup
1/3 cup apple cider
1/3 cup low-fat plain yogurt
1/4 cup canola oil (one person used apple sauce instead of oil)

Preparation
1. Preheat oven to 400. Coat 12 muffin cups with cooking spray.
2. To prepare streusel: Mix brown sugar, whole-wheat flour, and cinnamom in a small bowl. Cut in butter with a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in walnuts, if using.
3. To prepare muffins: whisk whole-wheat flour, all-purpose flour, baking powder, baking soda, salt cinnamon and nutmeg in a large bowl.
4. Whisk egg and brown sugar in a medium bowl until smooth.  Whisk in apple butter, syrup, cider, yogurt, and oil. Make a well in the dry ingredients; add the wet ingredients and stir with a rubber spatula until just combined. Scoop the batter into the prepared muffin cups (they'll be quite full). Sprinkle with the streusel.
5. Bake the muffins until the tops are golden brown and spring back when touched lightly, 15 to 25 minutes. Let cool in the pan for 5 minutes. Loosen edges and turn muffins out onto a wire rack to cool slightly before serving.

Fish & Chips

So, It's not so much a "new" recipe, but I tried something I've never had before.  This is what happens when I send Ty to the grocery store.  He came home with catfish.  I've tried very few fish in my life, and never catfish, but I gave it a try.  All I did was fry them in butter and salt & pepper in a pan(hence, not a "new" recipe)  And I quite enjoyed them.  I also made healthy fries in the oven.  I sprayed a cookie sheep.  Sprinkled Tony Chacheres, and placed my potatoes on that I had cut into halves, and then quarters, I even left the skins on!  Then I sprayed them on top with cooking spray and more seasoning and baked them at 425 for 20 mins or so.  I also added some green beans to the meal to add a little color and veggie.  Anyway, it was quite good and I'm even thinking about finishing off the rest of the fish for lunch.  And, my kids liked it too. Bonus!

ps Amy this is the website with simplified children's songs I was talking about
http://www.laytonmusic.com/primary.htm/Simplified%20Primary%20Songs/Simplified_Primary_Songs.htm  let me know if this works.  I think it helps a lot that they can play songs they hear from primary!  I love it! Enjoy!

Tuesday, June 26, 2012

Ok, so I am still alive and I have doing this diet I promise. I am just slow and crazy. So here are my points.
Week 1: 68 points
Week 2: 65 points but I did the bonus so that is 75 points right?
Also I hope it is ok that I am counting me serving running around like a chicken with its head cut off at work as my exercise because I am on my feet for hours always moving so I hope you all are ok with that :)
Also, those are points with me taking off the eating 2 hours before bed. But this week are we going to exclude that one or not? It is okay if we don't. I don't plan on winning, I just want to eat right. This is becoming harder than it should be! haha. We will get it eventually.
Hi everyone,

I am totally confused now, but you all know it doesn't take much to confuse me!  I have a few questions:  should we just eliminate the 2 hour before bedtime for everyone?  Do we need to have a second week to get bonus points or just have the one week?  I will do mine this week.  Katie, what are your points for last week?  What are Jake's points for last week?  Karina, what are your points for both weeks?

This is what I have so far:

Rachel Jake Amy Kristi Katie Karina Mom
June 11-17  70 73 73            73 72 73
June 18-24  70 70 71 71
June 25-July 1
July 2-8
Bonus Points 10 10 10 10 10

?!?!

It's funny how something we think is simple becomes so complicated!!  I don't know how the bonus points work.  Can anyone enlighten me?  Is it just for sick days? or anytime you want to use a bonus freebie, because yes, that would be quite easy.  20 extra bonus points and i can have a treat everyday!   @Rachel, I think you get the 10 bonus points from just six days, (at least that's what I hope!)  @Amy, since you did the extra last week I totally give you the 10 points! (I'm forgiving toward blonde moments)

Monday, June 25, 2012

sounds like last week should be a re-do!! and I would go for that! =-) I need to know about the extra 10 mins exercise each day.... do I have to do that all 7 days or do I still get a day off.... I did it everyday but on my day off I only did a small walk of 10 mins! So I don't know if I had to do the 20 plus 10 or what! so my points were 70 or 80 with bonus points! Good luck for the next week!! and I am fine with Karina not having to wait 2 hours before bed after she eats!! =-)

A week of sick kids

Well, I'm glad to know that I am not the only one who had a tough time this week.  Every single day last week except Sunday I was cleaning up puke! Brilee and Gage were sick and whiney so it was a VERY LONG week for me.  I was actually feeling pretty good about my points until about Friday.  That's when I was really starting to feel like I had no energy and my brain stopped functioning.  I still managed to get 71 pts which I am happy with.  But I have to admit I am off to a horrible start for this week.  I am already using my free day today.  We just got home from Lava and I don't think I have eaten a single fruit or veggie today, but I have had a few cookies and junk!  Oh well, at least the kids are not sick anymore!!!

ps I agree that Karina should be excused from the 2 hr points

Sun burnt momma checkin in

This was a really hard week for me...and I caved...several times....Since most of us are women...and I am married to the only MAN in this competition, then I will confess that I was having a special time of the month.  We also went camping, and we swam at the city pool for over 20 hours this week.  I got a serious sun burn on my back...and all the kids look like little Mexicans...not kidding.  I was unable to exercise the last three days of the week because I could not move my back without a lot of pain, so I kind of died on the extra points thing, unless you are all going to be nice to me and let me count last weeks since I exercised an extra ten minutes all week.  Jake said he would let me, but I wanted to see if you were all ok with it.  I understand if I just lose out, but I really did do the work, it was just last week.

It is really hard to go through a week like this without dessert...and so even though I had already used my free day on Friday when we went camping I decided I needed something sweet and I made cookies on Sunday.  I didn't have any butter so I used powdered butter, and I was so excited.  I made cranberry white chocolate chip cookies and they flopped....they looked horrible, maybe the butter, but they tasted ok.  I just felt so let down that I used my points on a mediocre treat!  I ended up eating the rest of the bag of chocolate chips.

We have swimming lessons all week this week as well and I am bracing myself for a hard one.  Jake is in Arizona all week and so it will be interesting.  Our favorite fruit this week was pears!  They are so easy to hork down... We also had lots of potatoes!  Oh yeah, we tried smores with coconut marshmallows....sooooo yummy!

my points were 70...and if I can get my bonus points for last week then I will use three of them for a 73....but let me know.
Hi everyone,
I just got back from Oregon yesterday.  We spent a week in the mountains and it was so much fun!  One night when it was just G & G , Jim, Glenn, and I there we stayed up until 11:30 listening to Grandpa tell stories--I love those times; we couldn't believe how late it was when someone looked at their watch!!  It was so much fun to see my family and spend some time with them.  G & G and Glenn are still planning to come over to Wardle Olympics next month; hoping G & G will feel okay, but Glenn said he is coming with or without them.

Boy, we sure get confused with points don't we, but just so long as we are all trying.  I don't care if we skip the 2 hour before bedtime, becasuse some times that is a problem.  We can do the bonus points any way you want to do it.  I will just keep them seperate from the other points.

My points for this week are:  71

For the bonus points I just drew the six names again for the next two weeks and put my name for both weeks, so we would all have equal time for bonus points--two weeks each.

June 25-July 1---Try a new healthy recipe and post it--Karina, Jake, Katie, Mom (I am thinking for Jake this could even just be a new smoothie or something like that)

July 2-8---Drink an extra 2 cups of water each day--Rachel, Kristi, Amy, Mom

Looking forward to seeing everyone next month.

Love, Mom

Karina- what are your points without the two hour thing?
Happy Monday Everyone!  If I lost a point, do I just add in one of my bonus points and keep track of how many I have left?  If so, I'm at a 73.  Also, I can count washing my floor by hand as exercise right?!  And it's not because I'm awesome, my mop is broken and I was almost literally stuck to my floor!   Here's to a more motivated week, I was dragging this last week!  Good luck everyone.
ps I would be totally ok with by passing the no food at night for Karina since she's working late!

Thursday, June 21, 2012

Well my family you are doing a great job. I on the other hand am not. I got the job as a server at wingers and I work late, come home, eat dinner, and go right to bed and I don't feel bad because I am starving when I get home! I am trying to do the best I can with everything else but I have lost the race once again! Keep up the good work!

Monday, June 18, 2012

It's late but still monday!! I have 15 min before I can go to bed anyway b/c I ate some toast at 9:25 :) I am more confused after reading all the posts...I got a perfect score but not entirely sure what that is.  I thought it was 79. I counted 13 pts/per day (including bonus pts) for 6 days plus my extra point for reporting today.  Either way it sounds like we are all off to a good start.  I have to admit I really, really did not want to workout today. I think I spent 20 min just getting up the motivation to actually do it.  Not a good start to my second week not to mention Brilee has been sick all day and now I'm am not feeling the greatest!

Jake and amys points

We both got 73. Jake also got 10 bonus points. He is super busy at work right now,so I am helping him out with posting...since he is the only guy I think it is ok.  We spent all day at swimming lessons today...it was beautiful and fun and made me excited to spend more time outside.  I think I have been inside too much.  Hope you are all having a good summer!
Mom is out of town--- I think they went camping so she can't post her numbers so when Brooke ran in to the house dad said she needed us to post her numbers and she got---- a 73 which I think is a perfect score!   I on the other hand did not get a perfect score I got a 70--- oh well hope to do better next week! =-)
OK, I'm not sure how the extra points go, I thought it was just added on, but what Amy is saying makes sense too.  On the extra points deal, Is it just for the six days, or do you have to do it all seven?  I totally spaced reading yesterday!  Also, do I have to share a new recipe or just report my points?  Ty's the one that made up a new dish this week.   I think there are 73 points possible each week w/o bonus, which is what I got barely.

Sunday, June 17, 2012

Now that I can eat healthy I need to learn to read.

Well....I already messed up.  I read this blog last week and thought that I was supposed to do the extra exercise this week...so I did, and now I get to do it again next week.  But I did get all the points this week.  It was a much easier start this time around.  It has been a hard week, but a good one.  I still feel like half the water I drink just "comes out in the wash" if you know what I mean!

I did have a questions about the bonus points....those are not added to our final score right?  They are just reserve points that we can use to replace points we might miss.....that is how I understood it....Jake was the same..so I was thinking we just make a note of when we are using a bonus point in out score..like I got 53 points, and I used 5 of my bonus points so I have 58 now...is that how you all understood it?

A new recipe we tried this week was rosemary ranch chicken kabobs with peppers.  They were super good and very tender.  The idea came from a website called the sisters cafe....it has some great ideas and yummy stuff.  We also tried apple muffins and baked potato fries with red potatoes....just cut into wedges and then roll in a little canola oil and season salt and bake @ 400 for 30 min.  These are our favorite healthy fries.  It was a good week...and the kids are eating better too!  Hope you all had a good week too.

p.s. for my free day I had homemade chocolate ice cream with peanut butter cups....

numbers so far.

Well, it has been a hectic few weeks for us here, so I am sorry that I have not posted the numbers for the last two weeks until now.  I didn't get numbers for Kim or Karina the last week, and Bret is now out of the competition.  I also have slacked off a ton and no had much motivation with my busy scedule...anywho...here are the current numbers for what I have:

Katie: 268
Kristi: 267
Millie: 266
Zenna: 260
Rachel: 259
Amy: 239
Jake: 233
Karina: 191
Kim: 183
Cami: 131

How is everyone doing?  I am a little burnt out with competing, and don't really have a chance, but still like that I am implimenting most of the things.  I don't know if I will make it 10 more weeks!  Let us know how you are doing....some of us need motivation!

One big one, or three minis?!

So, somebody mentioned breaking this competition into months and I want to know everyone's thoughts on it. Jake's tracker has 15 weeks, so we could easily go five weeks, and then start completely over with a new 5 weeks and so on. If we do $5 each time it's $15 total, but I don't know how everyone feels about that. I'm looking for feedback, suggestions, thoughts, different ideas. Or we can keep it how it is and none of you will have a chance to pass me up!!

Finally Chocolate!!

So I have been looking for a yummmy chocolate treat that is under 100 calories and I finally found one!! It is only 58 calories! per muffin!! so here is the recipe:
1 3/4 c oats
3 egg whites
3/4 c baking cocoa
1/2 c applesauce
1 tsp vanilla
1/2 c plain yogurt or greek yogurt
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c Hot water
1 c sugar substitute-- (I did add a little regular sugar like 3/4 sub and 1/4 regular)
put in blender or in food processor and blend- stir in 1/4 c chocolate chips and put into muffin pan and throw in a 350 degree oven for 10 mins, then take out and add 1/4 c chocolate chips on top put back in oven and cook for 2-5 mins. (I had to cook them for 6-7 more mins) when toothpick comes out clean they are done!! if you make 24 they are only 58 calories each!! and I think it said if you make 12 big muffins they are 116 calories!! Enjoy!!
This is just a test. I think I figured out this blog thing! I am a little slow! I hope everyone is doing better than me! haha Water is killing me!

I know that some of you are still not able to post on the blog. I will send you another invite, that may be the problem...you have to try it with the link soon after you get it or it will expire. I am not really good at this stuff, sorry. I hope you are all feeling healthier. I know I am...except on my free day when I eat all the sweets I can....not sure if that is counterproductive....but it sure tastes good! I did a Yoga class last week and I realized that I am the most unflexable person I know...except for Jake who can't even cross his legs. Good luck this week! Send your reports to Amy next week and I will get them up faster. It is my last name, then my first initial, then 15, at gmail. Thanks!

The hardest things for me

So I thought it would be fun to hear how everyone is doing. I am struggling the most with the water. I also get sick of thinking of fruits and veggies. What works for your home and how are you getting all your stuff in, or not! Jake has found me frequently drinking from a measuring cup to because that is the only way I can keep track of my water....or by the number of times I visit the John. I know that I am really bad at drinking water anyway, so this has been a great thing for me to focus on. When I got sick the first week I had just filled up with a huge salad and had been eating all sorts of veggies....needless to say, after having it come back up I didn't feel much like vegtables for quite a while. Jake and I like to make smoothies a lot, and that helps us get lots of fruits fast. We even tried putting carrots and spinach in them and the kids never even know.

Anyway, let us know what you are trying and what works and if you are even having fun!

Hi Family,
Just wondering who we are to report our points to--is it Jake or Kristi?  Also, who is going to hold onto the money?  Hope everyone got a perfect score this week!!

Brock's Birthday

So Day three and I'm already having a treat day! But I'll have you know, it was only because it was Brock's birthday! And how can you resist a mocha brownie with cookie dough brownie on top and Ice cream on your son's 1st birthday?! P.S. 'mocha' does not mean 'mucho'!!! (Funny story you'll have to ask about later!) I even tempted Zenna into a treat day, but mom and Rachel stayed strong! Way to go!

Dirty Dash

So I (and Brilee) signed up for the dirty dash.  Hope we aren't the only ones representing the Wardle Waddlers.  That is what I put for our team name.  It is $45 if you register by today (3/21) and $50 by 5/29 and $5 for kids ages 2-12.  It is June 2 at 12noon.  The kids race is at 2:20.  If you are too scared to run in the adult one you can just run with your kiddos.   I think it will be a lot of fun and the more the merrier.  So if you want in go to the website www.thedirtydash.com and register under our team name.

Chicken Pot Pie

This is a new one I tried and all four of us loved it!!  Plus it's full of veggies! I put potatoes in it instead of peas (I am not a big fan of cooked peas). I got it from ourbestbites.com

Chicken pot pie Ingredients

  • 1 pound skinless, boneless chicken breast halves - cubed
  • 1 cup sliced carrots
  • 1 cup frozen green peas
  • 1/2 cup sliced celery
  • 1/3 cup butter
  • 1/3 cup chopped onion
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  •
  • 2 (9 inch) unbaked pie crusts

Directions

1.     Preheat oven to 425 degrees F (220 degrees C.)

2.     In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.

3.     In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.

4.     Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.

5.     Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Black Bean and Corn Quesadillas

Ok...so I know I seem obsessed with this. That is why I have not started a blog because I am tempted to spend too much time and I have a big mouth...but we had this for dinner last night and it is a great healthy meal, no meat, and kids loved it!

Ingredients:
2 teaspoons olive oil, 1/4 cup salsa
3 Tablespoons finely chopped onion, 1/4 teaspoon red pepper flakes
1 (15.5 oz) can black beans, drained, 2 Tablespoons butter, divided
1 (1o 0z) can whole kernel corn, drained, 8 (8 inch) flour tortillas
1 teaspoon brown sugar, 1 1/2 cups shredded Monterey Jack Cheese

Heat oil in large saucepan over medium heat. Stir in onion and cook until softened. Stir in beans, corn, sugar, salsa, and pepper flakes (I didn't have these) mix well, cook about three minutes.

Melt 2 teaspoons of butter in a large skillet over medium heat. Place tortilla in the skillet, sprinkle with cheese, then top with some of the bean mixture. blah blah blah....you all know how to make a quesadilla...if you don't, figure it out...

Eat with salsa, sour cream, and avocado!

Enjoy!

Also....for my water drinking I filled a pitcher of water with all the water I need to drink, and keep it in the fridge, I am half way done, so it is not as hard as I thought, and this helps me keep it in my mind.

Test.

I am signed in as Jake to see if it works to have someone other than me post something.  you will have to get on the blog, sign in with your account and then hit post, and you should be able to contribute.  Let me know if you have any problems....and I will feel sorry for you, but may not be able to assist you.  :)
