Black Bean and Corn Quesadillas

Ok...so I know I seem obsessed with this. That is why I have not started a blog because I am tempted to spend too much time and I have a big mouth...but we had this for dinner last night and it is a great healthy meal, no meat, and kids loved it!

Ingredients:
2 teaspoons olive oil, 1/4 cup salsa
3 Tablespoons finely chopped onion, 1/4 teaspoon red pepper flakes
1 (15.5 oz) can black beans, drained, 2 Tablespoons butter, divided
1 (1o 0z) can whole kernel corn, drained, 8 (8 inch) flour tortillas
1 teaspoon brown sugar, 1 1/2 cups shredded Monterey Jack Cheese

Heat oil in large saucepan over medium heat. Stir in onion and cook until softened. Stir in beans, corn, sugar, salsa, and pepper flakes (I didn't have these) mix well, cook about three minutes.

Melt 2 teaspoons of butter in a large skillet over medium heat. Place tortilla in the skillet, sprinkle with cheese, then top with some of the bean mixture. blah blah blah....you all know how to make a quesadilla...if you don't, figure it out...

Eat with salsa, sour cream, and avocado!

Also....for my water drinking I filled a pitcher of water with all the water I need to drink, and keep it in the fridge, I am half way done, so it is not as hard as I thought, and this helps me keep it in my mind.

  1. That sounds yummy! One of my new year's resolutions is to try one new recipe a week. So far we have only had one absolute failure!! I will have to post some of our faves
